Walnut Sun-Dried Tomato Pate
Ingredients
- 1 cup walnuts
- 1/3 cup sun dried tomatoes
- 1/3 cup fresh parsley chopped
- 1 tbsp olive oil
- 1 lemon juice
- 5 roasted garlic cloves
- 4 tbsp water from soaked tomatoes
- 1/2 tsp sea salt
Instructions
- Soak walnuts in water for few hours
- Soak sun dried tomatoes in water for a few hours
- Roast garlic in oven- to roast garlic but cloves in aluminum foil drizzle with olive oil and roast 400F for 40 minutes
- Drain walnuts and sun dried tomatoes (keep a bit of the water from tomatoes) and remaining ingredients
