Stone Fruit Summer Salsa

Ingredients
  

  • 2 lbs stone fruit peaches, plums, cherries, nectarines, mangoes
  • 2 Scallions minced
  • 1/4 cup Cilantro chopped
  • 1 tsp Ginger peeled and minced
  • 1 Garlic clove peeled and minced
  • 1 Lime juice
  • 1 tsp Raw Local Honey optional
  • 1/4 tsp Sea Salt

Instructions
 

  • Remove the drupe (pit), and discard.
  • Dice the fruit and place into a mixing bowl. For the recipe above I used peaches, plums and cherries.
  • Add the scallions and cilantro and toss. Combine ginger, garlic, lime, honey, and sea salt.
  • Pour into the bowl and toss all ingredients.
