Ingredients

buckwheat flour

chia seed mixed in 1/2 cup water
let sit to gel for at least 1 hr; then add in
1/3
cup
unsweetened applesauce
1/2
cup
Unsweetened Coconut Milk
1/3
cup
melted coconut oil
1/3
cup
Honey
1
cup
strawberries
1
cup
raspberries
walnuts
optional
Instructions
In a food processor process your oats until they are somewhat fine. Add in the rest of your dry ingredients and pulse.
Add in wet ingredients and mix well.
Add in fruit and just pulse gently so you still have chunks of fruit left- if you want to add in some nuts do so here.
Pour into an 8×8 oiled pan.
Bake at 350F for 40-45 minutes.
Top with coconut cream, coconut ice cream or eat as is.
