Preheat oven to 400 degrees.
Pour EVOO into oven-safe cast iron skillet and ensure sides get a coating.
On the stovetop, heat for 2 minutes on medium high. Meanwhile, whisk together the eggs and milk. Add in vegetables and pour all into skillet.
Heat for approx. 5 minutes united the sides start to cook.
Transfer to oven and cook for 15-20 minutes until the liquid has set.
You can also put it under the broiler for a couple minutes at the end for a nice brown crust.
