Ingredients
  

  • 1/4 cup Extra-virgin olive oil
  • 6-8 Eggs
  • 1/2 cup Almond Milk
  • 2 cups mixed vegetables green beans, tomatoes, onions, kale, and mushrooms1. Preheat oven to 400 degrees 2. Pour EVOO into oven-safe cast iron skillet and ensure sides get a coating

Instructions
 

  • Preheat oven to 400 degrees.
  • Pour EVOO into oven-safe cast iron skillet and ensure sides get a coating.
  • On the stovetop, heat for 2 minutes on medium high. Meanwhile, whisk together the eggs and milk. Add in vegetables and pour all into skillet.
  • Heat for approx. 5 minutes united the sides start to cook.
  • Transfer to oven and cook for 15-20 minutes until the liquid has set.
  • You can also put it under the broiler for a couple minutes at the end for a nice brown crust.
