FODMAP Cilantro Lime Grilled Shrimp Salad

Ingredients
  

  • 1 tsp Coconut oil
  • 1/2 cup Fresh Cilantro leaves
  • 1 container salad greens
  • 1/2 cup Fresh Cilantro stems
  • 2 limes juiced
  • cilantro lime dressing to taste
  • 1 tbsp tamari
  • 1 pound shrimp cleaned and unshelled
  • 3 limes quartered
  • 2 tbsp Fresh Cilantro chopped

Instructions
 

  • Make the Cilantro Lime Shrimp Marinade…. blend together cilantro stems and leaves, limes, and tamari in a blender until smooth. Pour over shrimp, cover and marinate for 1 hour in the refrigerator.
  • Heat a stove-top skillet with coconut oil on medium high heat, and sauté marinated shrimp until fully cooked. Remove, and place over a bed of salad greens mixed with 2 Tbsp chopped cilantro, and garnish with squeezed lime.

Notes

  1. Salad greens can be any tender green. Other vegetables can also be substituted/added.
