Make the Cilantro Lime Shrimp Marinade…. blend together cilantro stems and leaves, limes, and tamari in a blender until smooth. Pour over shrimp, cover and marinate for 1 hour in the refrigerator.
Heat a stove-top skillet with coconut oil on medium high heat, and sauté marinated shrimp until fully cooked. Remove, and place over a bed of salad greens mixed with 2 Tbsp chopped cilantro, and garnish with squeezed lime.
Notes
Salad greens can be any tender green. Other vegetables can also be substituted/added.
