Sugar Free Sunflower Seed Pumpkin Butter
  1. Set oven to roast setting at 500 degrees.
  2. Spread raw seeds over a baking sheet and drizzle with the tbsp of coconut oil.
  3. Roast seeds in the oven until fragrant and beginning to brown. WARNING: Seeds go will burn quickly, be sure to watch them. They will continue to roast even out of the oven. This process will take no longer than 5-10 minutes depending on your oven.
  4. Allow seeds to cool. Then, add then to a food processor or blender.
  5. Add the 1/2 cup coconut oil and spices and blend until your nut butter forms.
  6. Add the pumpkin and blend until just combined.
  7. Store in an air tight container in the fridge.
